  • Cooking with the Godfather

    Irish Fest in Milwaukee is fast approaching.  I think it's next weekend but I can't be for sure because I've got Irish blood in me and I confuse easily.  Can you spot a common theme?

    Baked Potato Soup

    3 T. butter                    1 ½ C. Buttermilk                     1 ½ C onion (finely diced)
    ½ C. sour cream           1 ½ T. minced Garlic                ½ C. grated Parmesan cheese
    6 C. chicken broth        2 ½ tsp. salt                              4 baked potatoes (halved, pulp, scooped out and put through a ricer)             1 tsp. pepper                            2 T. red wine vinegar

    In a large pot over high heat, melt the butter, and add the onions and garlic.  Cook over medium heat until translucent.  Add hot stock and stir to combine.  In separate bowl, mixed potatoes, buttermilk, sour cream, and Parmesan cheese.  Add this mixture to soup, stirring constantly.  Season with salt and pepper.  Remove from the heat and add the red wine vinegar.  Stir.  Garnish with chives and bacon bits.

     

    Mickey’s Corned Beef and Cabbage with Mustard Horseradish Sauce

    1 (5-6lb.) corned beef with pickling spices                    ½ tsp. salt and pepper
    1 (12 oz.) can of beer                                                   6-8 medium potatoes
    10 peppercorns                                                            2-3 medium onions
    1 bay leaf                                                                     6-8 medium carrots

    Mustard Horseradish Sauce
    ¼ C. prepared horseradish                   1 tsp. honey                  ¼ C. mayonnaise
    ¼ tsp. black pepper                             1 ½ T. Dijon mustard (or ½ tsp dry)
    ½ C. whipping cream

    Place corned beef and pickling spices in a deep electric frying pan or a Crock Pot.  Add beer, peppercorns, bay lead, and water to cover.  Cook 4-5 hours over very low heat.  If using a pot simmer 3 hours.  Check occasionally to make sure water still covers meat.  Prepare vegetables during last hour of cooking.  Scrub and halve potatoes.  Rinse cabbage and remove tough outer leaves.  Core and cut in quarters.  Peel onion and quarter.  Trim and peel carrots and cut in large chunks.  Add to corned beef.  Cook 20 minutes and check vegetables.  Remove with a slotted spoon to a bowl when they are just done (the carrots even a bit crunchy if you like).  Toss with salt and pepper.  Check corned beef for tenderness (a knife and fork would slide into it easily).When done, remove from water and drain well in colander.  Place corned beef on cutting board and cut across the grain into ½ inch slices.  Arrange on platter and surround with vegetables.  To make mustard horseradish sauce: combine all ingredients except cream in a medium bowl.  Whip cream until it forms soft peaks and folds into mixture.  Cover and refrigerate until serving. 

     

    Potato Chip Cookies
    1 C. butter                    2 C. flour                      ½ C. sugar                   Nuts (any you desire)
    ½ C. potato chips (crushed)

    Mix all ingredients.  Put balls on cookie sheet and bake at 350° for 16-18 minutes.

    I can't remember exactly where it was but I think it was at the Olympics this year but anyway the people accidentally played the fictional Kazakhstan anthem from the Borat movie instead of the real one.

    I have no laundry detergent jokes.  I feel like I've let you down.  I hope I could Gain a few readers because of this post but more than likely you will Whisk me away because I am All crazy and I bet you will all Cheer.  Hahaha...XTRA!

    Oh and if you were wondering about the vlog, well I recorded it this evening and I talked and talked and talked.  I broke it into three parts and each one is about 10 minutes.  I talk way too much.  Anyway, that should be posted on Wednesday.  Have a great night.

  • I caught Jerry Seinfeld's Comedians in Cars show with Larry David in the first episode. (I don't think David likes chicken.) And the Pod People feature on MST3K. Ever notice how gas pumps look like robots? One of these days one of them is going to call me Will Robinson. I swear. Can't wait for Wednesday!

  • I LOLed at the picture of Marvin staring at the rover camera. That would have been great!!! And thank goodness NBC isn't in charge of the Mars landing, I feel like we've narrowly escaped never knowing about it, just by who is in charge!!! Awesome awesome Drawsomething.

  • When I saw your Borat post on Tumblr it made me feel better about life. So I looked up more Borat. And, in the process, I found the clip of the incorrect national anthem. I laughed so hard and felt terribly guilty because of it. Ahhh but it was funny.

    I think that Borat thing was not at the Olympics. They talked about it during the opening ceremony. Could have been at a pre-qual. Pretty damn funny, though. I mean sad. Sad.

  • @bonmots - I think your question was one that I struggled with the most because I also took into account their careers.

    The theme was all recipes contain the most important item in Irish cuisine...the potato.

  • @sleekpunk - I think the real reason gas prices are jumping is because those robot gas pumps are changing the prices and are using all the extra money to arm themselves.

  • @raiderjester - OK that sounds like a plan, I'll have to make some plans about meeting up.  I wouldn't want you coming out to the sticks and having a run-in with some deer or Amish and ruining your trip.

  • @Lakakalo - yeah they aren't bad cookies, you get the sweet and the salty.  I love food like that.  One of my favorite snacks to get at the chocolate shop is chocolate covered potato chips.

  • @Kellsbella - you know, I have never been to the state fair.  I usually swing down to the Dane county fair but not the state one.  I'm not much for fairs because I don't like crowds of people and also the state fair has taken a violent turn.  I think it was 2 years ago when the guy who ran against Gov. Walker was assaulted because he stopped a guy from beating a woman in the parking lot.  Last year there were so many muggings and gang violence from all these teens that it made a lot of people stay away.  No cream puff is worth that.

  • @Thatslifekid - It's funny where I got that recipe.  It was in the local farmer's co-op newsletter that talked about the advances of corn seed and introduced me to the new mechanics at the co-op's gas station and repair shop.

  • @Cestovatelka - I think the Borat movie and segments on his shows make me think that Kazakhstan is the most backward country in the world.  I loved how when that movie was coming out, the Kazakhstan tourism board put out commercials declaring how great the country was and how it was nothing like that movie.  Maybe one day I'll go there and ask where Borat is.  They'll probably lock me up.

  • @ZombieMom_Speaks - yeah, I basically am the typical American mutt, my mom's side has so many different nationalities on it that doing family research it got pretty stressful because I'm finding Scottish, Irish, German, Welsh, English, and French origins.
    There was a movie director named Jewison but he wasn't Jewish.
    I used that line about Hitler and people thought I was the most evil man ever.  I just wish I could be more like him and not take shit off magicians.
    I figured I'd do them all in one post and just write the people's names who asked the question for each particular vlog.

  • @xdeelynnx - oh man corned beef...that was like a staple in my house when I was growing up.  We had it at least once a month.  Now I eat it whenever it's on sale at the store.

  • @promisesunshine - yeah the chips give a salty taste so you get sweet and salty in one bite.  I love food like that.

    Chevy Chase may be adorable but he also seems litigious so that's why I included the disclaimer.  I think he sued Family Guy over something and they settled out of court and the settlement was something like him getting a guest spot on the show.  Maybe I should sue Family Guy.

  • @godfatherofgreenbay - Yes, yes, I remember that incident. My cousin's bar is right across the street from the venue.

    Gah! I love that grilled corn from the WI state fair! I've started grilling the corn in the husk for about 20 min. It is sooo good! I feel a food orgy comin on....be afraid.....be very afraid.

  • @Peridot21 - you get salty and sweet...so good.  My favorite chip dessert type thing is sold at a fudge shop in the old tourist town.  Chocolate covered Ruffles chips.  So good

  • @spinner_mom - yeah I really don't get NBC's coverage plus they are threatening people on Twitter for revealing winners.  Some guy had his account terminated because he gave away the winners of some events.

  • @AncoraImparo - Borat is so funny but the best bits weren't from the Borat movie but from the Ali G show.  That was some funny stuff.  I think the funniest is when Borat learns manners and goes to some formal dinner.

  • @distractedbyzombies - the wife doesn't like corned beef?  I know a lot of people don't like it because of the saltiness but what I do is boil it the night before and it takes a lot of the saltiness out.
    Yeah, that's where I heard it.  I believe it was probably the Asian qualifiers.

  • @Lakakalo - hmmm that sounds good, there's a restaurant around here that serves what they call a Memphis Burger which is a hamburger with bacon and peanut butter...so good

    Hmmm I may have been to that bar.  I had a friend that lived in that general vicinity.  I remember sitting outside his parents' house and listening to the race track.
    I like grilled corn but I don't grill it in the husk, I usually wrap it in tinfoil along with seasoning and butter.

  • @godfatherofgreenbay - Actually, nobody will eat it but me. When I make it, I end up eating it all. Then I have to make something else for the rest. I didn't know about pre-boiling it. That might just do the trick, thanks.
