  • Cooking with the Godfather

    I am going to bring back some old recipes I posted a long, long time ago when I had about 1 or 2 readers who had Xanga accounts.  No I don’t have photos…sorry.  They are quite tasty…trust me.

    Dill Pickle Soup
    3 tablespoons butter
    ¼ cup finely chopped onion
    ½ cup white wine
    ½ cup plus 1 tablespoon all-purpose flour
    5 cups water
    1 ½ cups dill pickle juice
    2 teaspoons dried dill weed, crushed
    ½ cup whipping cream or milk
    Salt and white pepper to taste
    1 large dill pickle, cut julienne

    In a large soup pot over medium heat, melt butter.  Add onion and sauté until soft.  Add white wine and continue cooking until almost all liquid evaporates.  Reduce heat to low and stir in flour (do not brown).  In a large bowl, combine water and pickle juice; add and whisk in all at once to onion mixture.  Bring to a boil, stirring constantly, until soup slightly thickens.  Add dill weed.  Stir in whipping cream or milk to desired consistency.  Season with salt and white pepper.  Remove from heat.  Serve in soup bowls and garnish with julienne dill pickle.
    Makes 4 servings.

    Guiltless Oven-Fried Chicken Fingers
    1 cup low-fat mayonnaise
    1 tablespoon curry paste, or more
    Kosher salt
    Freshly ground black pepper
    4 skinless, boneless chicken breasts
    2 cups panko (Japanese) bread crumbs

    Heat the oven to 350 degrees F.  In a large bowl, combine the mayonnaise and curry paste, to taste.  Thin this with a little water, 1 tablespoon at a time, until you get the consistency of heavy cream, and season with salt and pepper.   Cut the chicken breasts into thick strips.  Drop the strips into the bowl and coat them well with the curry mayonnaise.  Cover and refrigerate for at least 5 minutes or up to 1 hour.  Pour the bread crumbs onto a plate and toss the chicken strips well to completely cover them.  Put them onto a nonstick baking sheet and into the over.  Cook for 15 to 20 minutes, or until the chicken is browned and cooked through.
    Yields 4 servings.

    Microwave Chicken Curry
    2 tablespoons Indian curry paste
    3 tablespoons olive oil
    4 boneless, skinless chicken breasts, cut into strips
    ½ bunch basil, leaves chopped
    ½ bunch cilantro, leaves chopped
    2 (13.5 ounce) cans coconut milk
    2 tablespoons soy sauce
    Kosher salt
    Freshly ground black pepper
    Steamed rice, to serve
    Paprika, for garnish
    1 scallion, thinly sliced, for garnish

    In a large microwave safe pot with a lid, mix together the curry paste and oil.  Microwave on high for 3 minutes.  Add the chicken to the pot and stir.  Cover with the lid and microwave on medium for 8 minutes.   Add the basil, cilantro, coconut milk, and soy sauce and season with salt and pepper.  Give it a good stir, cover it, and microwave on medium for 4 minutes.  Stir it again, cover, and let rest for 3 to 4 minutes.  Serve over steamed rice, garnished with paprika and scallions.
    Yields 4 servings.

    Grilled Banana Split Sundaes
    2 to 3 bananas
    1 frozen pound cake, thawed
    1 whole pineapple
    About 10 maraschino cherries
    ½ stick butter melted

    Sauce:
    1 pint heavy cream
    9 ounces good-quality semisweet chocolate, chopped

    Vanilla ice cream for serving
    Special equipment: wooden skewers, soaked in water for at least 30 minutes

    Preheat an outdoor grill.  Peel and cut the bananas into ½ inch thick slices.  Trim the top off the pound cake and cut the rest into the same size squares as the banana chunks.  Cut the top and bottom off the pineapple and remove the rind from around the sides.  Cut the pineapple in half and then into quarters.  Trim the core and cut each piece again lengthwise.  Cut the strips into ½ inch thick pieces.  On a wooden skewer, alternate pieces of banana, pound cake, and pineapple until skewer is full, leaving about 2 inches for a handle.  You should have 8 to 10 skewers.  Finish with a cherry.  Brush with melted butter and grill for 1 to 2 minutes each side.  (Alternatively, you can broil the skewers for about 1 to 2 minutes per side)

    Sauce: Meanwhile, heat the cream in a small pan over medium heat; do not let it boil.  Add the chocolate to the warm cream.  Let sit for a few minutes, then stir the mixture to melt all the chocolate.  Cool for a few minutes and pour into a squeeze bottle.  Scoop ice cream into bowls and top with a skewer.  Squeeze some chocolate sauce over the top and serve.
    Yields 8 to 10 sundaes.

    And love the graphics, especially that littel kid dancing. I think I saw that on The Soup once. :)

    No problem…I like cooking but I don’t always cook because it’s hard cooking all this food for just one person. The dill pickle soup is my second favorite soup.

    That’s from Yo Gabba Gabba and yes, The Soup frequently featured the dancing.

  • chicken dishes smell yummy. I love chicken curry! Now i am not a soup eating person, and i tend to avoid sweets, even though i like them..I got a suggestion on the second dish. Switch mayo with mustard and curry paste with balsamic paste..

    I find these easy except the grill recipe. That takes some time and I wouldn’t use a grill just for that recipe.

    Yeah I also have a recipe for microwave eggs benedict. Microwave cooking got me into cooking in general.

    The dill pickle soup is one of my faves. I’ve thickened it up and used it as a gravy for chicken…excellent.

    It is but maybe when I grilled I didn’t clean off as much as I should and it had a beer flavor from the brats I grilled right before.

    i used to eat mayo but after a few blood tests i stopped it. Balsamic is one of my favorite ingredients. I can use almost everywhere. Btw if you wanna switch to healthier food, use olive oil instead of butter. Especially when you use it for frying.

  • Now you’re speaking my language!  I love to cook; I love curry, I will learn to love Dill Pickle Soup; and the grilled banana split sounds to die for!!!  I never skimp on dessert; I simply ride a few more miles and climb a few more hills.

    BTW the beer cheese soup sounds interesting too.

    Well here is the recipe for the beer cheese soup. I love it and usually make up a batch for a weekend of watching football. For me it’s better than drinking beer plus it kills two birds with one stone as far as required Wisconsin football viewing is concerned.

    Those banana splits are so good. I have fired up my gas grill just to make them.

    That’s not always good because your body needs the fuel and the more food you have it metabolizes and gives you more energy to burn off calories. Now you don’t have to eat all of this at one meal but like vegetables and fruits are great. For lunch I splurged and had ravioli and a beef sandwich but for supper all I ate was lettuce and celery. Hell celery is like eating nothing because it takes more calories to chew it than is in it.

    Yeah…I actually had some a while back, it was smoky bacon mayonnaise. It was so good.

  • oh man you guys got the good stuff..i so want to have some of that. I should start to make a list of food i wanna eat on my visit to the US.

    No wonder though, that half of you guys are obese. That stuff should come with blood thinners XD

  • I made the chicken curry tonight albeit with a few modifications.  Instead of microwave I did it on the stove.  For some reason the smell of microwaved chicken, and even eggs, gags me.  Anyway, it was delicious.  I think next time I’ll add some lemon grass too.  Thanks.

    Yeah that’s true. This is the original Baconnaise. The stuff I got was an off-brand. The real original also has a light version so maybe we are starting to get health conscious.

    I guess microwaves don’t bother me. Eggs are difficult to make though. It seems like every microwave has different nuances and the results are always different. I am glad you enjoyed. Feel free to do whatever you want with these. I just want people to get as much enjoyment out of them as I do.

  • well mostly is stupid stuff that we don’t have here. Apple jacks and fruity loops. Pancakes with ms Buttersomething syrup. Deep dish pizza, white castle burgers. Drink dr pepper. that kind of stuff

    Hmmm I’ve never been a fan of sugary breakfast cereals although I will splurge from time to time and get some. Pancakes are delicious and it’s Mrs. Butterworth…that is a good pair. I used to love White Castle when I lived in Minneapolis but when I moved back to Wisconsin, I don’t have one near me although you can buy frozen White Castle burgers in the grocery store but those never taste the same. Oh and I drank Dr. Pepper today.

    Yeah…I guess I shouldn’t be upset about not having a White Castle near me when I have so much other food at my fingertips although since I live in a rural area, the closest McDonald’s is at least 20 miles away but I do have a Subway in my little town.

  • From what i see you seem to enjoy cooking. I would recommend that you try mediteranean cuisine. Easy to cook, delicious and healthy.

    I’ll have to admit that I do not much enjoy seafood and I also think I may have allergies because the last time I ate shrimp I broke out in hives. I have recently gotten into gyros and tzatziki sauce.

    aah gyros and tzatziki are tourist food! You should try mousaka (it’s a toughie though) and some other stuff. I could write down some recipes for you if you want.
